If you’re short of ideas or have never thought of doing anything with Jamaica Ginger Cake other than open the packet and shove it in, perhaps washing it down with a nice big cup of tea, have a look at the ever lovely Rustie Lee doing her stuff. I am particularly taken with her truffles and will definitely be having a go at making them in the not too distant future! I think they will make delicious little gifts at Christmas but I may have to practice a bit first…and taste one or two!

I have a soft spot in my heart for McVitie’s Jamaica Ginger Cake as it was the cake of choice which my best friend from school and I shared at lunchtimes before she emigrated to the US in 1985. Before she left, she popped a box of goodies on my doorstep, nestling at the bottom was a Jamaica Ginger Cake! She’s not been having the easiest time of late and writing this post has prompted me to parcel up a couple in their nifty new packets and post them off to her from me with love!
