Vegetarian Chilli and Flash Fried Veg in Tortillas!

I wasn’t going to post a meat free recipe this week, what with everything else I’ve got on my plate (badum- tish) but this week is National Vegetarian Week, I can’t let that go by!

This week we may well be eating veggie fast food as I fly in and out of the house juggling travel arrangements and packing. One of my favourite standbys has to be chilli beans and flash fried veg in tortilla wraps. It takes minutes, it’s fun to eat and it’s delicious!

Ingredients (serves 2)

One tin of chilli beans (kidney beans in chilli sauce)

One red onion, peeled and sliced

Half a red pepper, sliced thinly

100g mini corn sliced in half lengthways

100g chestnut mushrooms, sliced thinly

100g dwarf green beans, topped and tailed

1 large carrot, julienned (sliced into matchsticks)

1 garlic clove, crushed

1 inch piece of ginger root, peeled and finely diced

freshly ground black pepper

a splash of soy sauce

a glug of olive oil

To serve

Home made or shop bought guacamole

salad leaves

sliced tomatoes

grated cheddar or fried haloumi (sliced, dredged in flour and fried quickly on both sides in hot oil until brown and crispy)

one packet of flour tortillas (this is enough to fill 8 of the smaller ones)


Fry half of the onion in a little olive oil in a small pan, add the beans in their chilli sauce and simmer gently until the sauce is reduced a bit (you can add stuff to  it if you want…sun dried tomatoes sliced up are lovely)

Meanwhile flash fry all the vegetables in a glug of olive oil (pop a lid on for a couple of minutes to steam the beans as they can be a bit too crunchy otherwise and people complain, saying things like ‘Mum, these are raw’ and ‘Oh, uncooked green beans again, nice, not’)

Add the ginger, garlic, black pepper and soy sauce and fry for a further minute

While the veg are frying cook the tortilla according to the packet instructions (they usually take 10 mins in a hot oven wrapped in foil which is just the right amount of time to get the veg done!)

Serve everything up in separate bowls so that everyone can make their own wraps.

Easy peasy.

  2. This sounds amazing, definitely something I will try this week. Tasty and quick, my kind of meal.

    • Definitely needed this week! We had it last night and it was delicious as always, hard to go wrong with it – do pop in veg of your choice, don’t feel bound by my list! I often use shredded cabbage instead of beans. x
